What do you serve a Congressman for dinner?

When I married my husband 12 years ago I never thought that someday he would be involved in politics.  He has served on the State Central Committee for the republican party for the past two years, he has been a state deligate and a caucus chairman...but my husband was elected to a new position on Saturday night.  He is now the Tooele County GOP Chairman. 
He came home and told me we would probably be having a Congressman over for dinner sometime...so what would I serve for dinner? 
I am sure I will figure it out when the time comes but it seems very intimidating.  I have been to a few events over the last couple years with Erik and gave rubbed elbows with a few politicians..its actually kinda fun and the ones I have met are very nice.  I went and volunteered at State Convention last year and I would do it again in a heart beat.  I am not sure what the next couple years have in store for us and the many more people we will get to meet but I know my husband will do a great job with this new position.
